    Sequoia Photos app, how do I mark a photo with a color or other method once it's been assigned to an album created in the same app?

    I don't understand what you mean by "mark a photo with a color or other method".

    As far as I know, there has never been an option to mark or assign a
    color to a photo in Photos.

    You can assign a KEYWORD to a photo, and you can do so before or after
    adding it to an album.

    You can't add coloured tags to images in Photos. You can add keywords.

    If you want coloured tags, you'll have to use Adobe Bridge or Adobe
    Lightroom, or just use the MacOS Finder.
