For sure. I believe it extends from at least the Mexican/US border
north to Alaska along the Pacific coast.
Not sure about Mexico but it wouldn't surprise me if there was a
large Japanese - and other Asians - presence there as well.

Exactly. The article where I read it quite some time ago had a well
known Japanese chef opening the first sushi bar in Vancouver with one
in San Fransisco pulling up a close second. Either that or the other
way around but I seem to recall Vancouver being first. I'll have to
see if I can find that article again to confirm my memory of it.

Perhaps we have crossed the point of no return and there is little to nothing of any real value left to economize. For example many of the fresh fish sold in the marketplace isn't really what it is advertised
as being, and costs more than the real fish did before it was fished beyond sustainabllity (ie economized). With each replacement species
the cycle is repeated until there are no substitutions.
Simple economics.
