Make-Ahead Summer Casseroles

Title: Layered Beef Casserole

Yield: 8 servings
6 md Potatoes, peeled and thinly
- sliced
15 1/4 oz Can whole kernel corn;
- drained
1/2 c Chopped green pepper
1 c Chopped onion
2 c Sliced fresh carrots
1 1/2 lb Lean ground beef
8 oz Can tomato sauce
Salt & pepper
1 c Shredded Velveeta
In a greased 13" X 9". baking dish, layer the potatoes,
corn, green pepper, onion and carrots. Crumble beef over
vegetables. Pour tomato sauce over top. Sprinkle with
salt and pepper.
Cover and bake @ 350ºF/175ºC for 2 hours. Sprinkle with
cheese. Let stand for 10 minutes before serving.
